Passion fruit is deceptive. The juice itself is easy to clarify, but the stream carries hard black seeds and tough fibrous sacs that destroy pumps, block plate heat exchangers and score the seats of homogeniser valves within a single season. Presses and paddle finishers leave a large share of that load in the juice.
